Ise udon introduction

Ise udon is eaten mainly in Ise City, Mie Prefecture, and has a thick and crisp texture that is nearly twice as normal udon. The sauce uses tamari soy sauce, the color is very dark and looks salty, but it does not have as much salty as it looks, and the umami and sweetness are generally strong, and the aftertaste is mellow. The condiments can be enjoyed mainly with leeks only and very simple but profound flavors. It is an indispensable dish for Oise pilgrimage.
