Mr. Teruto Aoki, who opened “Shokudoen” in 1954, arranged Korean hamheung (hamhoon) cold noodles and Pyongyang (Pyongyang) cold noodles and developed them independently. Its biggest feature is its elastic, chewy noodles and a refreshing soup made by slowly simmering beef bones and chicken bones. The rich flavor and coolness of the soup, combined with the unique texture of the noodles, provide an exquisite texture and flavor. Morioka cold noodles are characterized by the refreshing acidity and spiciness created by cold beef bone soup and kimchi. The noodles are mainly made from flour and potato starch, are transparent, and you can enjoy their smooth texture.
