The “Omelette Rice of Hodatsushimizu” (宝達志水オムライス, Hodatsushimizu Omuraisu) is a new local gourmet dish developed in honor of Shigeo Kitahashi, the French chef and founder of "Hokkyokusei" in Osaka, who is credited with the creation of "omelette rice" during the Taisho era. Kitahashi was born in Hodatsushimizu, Ishikawa Prefecture, inspiring this local specialty. Kitahashi opened a Western-style restaurant (now "Hokkyokusei") in Osaka called Panya Dining and created omelette rice by combining an omelet with tomato ketchup-seasoned rice for a regular customer, marking the dish's origin. Since 2011, Hodatsushimizu-cho in Ishikawa Prefecture has initiated the “Home of Omelette Rice” project. This involves local restaurants serving their own original versions of omelette rice, as well as organizing events dedicated to the dish. These efforts aim to bring the community together and establish Hodatsushimizu as a celebrated "omelette rice town."
