Komatsu Udon (小松うどん) is a famous dish from Komatsu with over 300 years of history and tradition. It is said that even the legendary poet Matsuo Basho enjoyed it. During the Edo period, it was presented to the Kaga Domain and sent as a special delicacy to the shogunate and feudal lords. The noodles of Komatsu Udon are thin with a pleasant firmness, made using the pure spring water from Mount Hakusan.
