About Kaku-zushi
Kaku-zushi (角ずし, kaku-zushi) is a traditional local dish from Ōda City in Shimane Prefecture, often enjoyed during festivals and special occasions. It is made using a small wooden mold roughly 5 cm in size. Layers of vinegared rice and sweetly simmered vegetables such as carrots and shiitake mushrooms are pressed together, and the dish is finished with a vibrant topping of thinly shredded egg crepe.
Unlike some sushi varieties, kaku-zushi does not include fish or meat, with its focus instead on the natural flavors of the vegetables. Its excellent shelf life makes it a popular choice for celebrations and important events. Kaku-zushi encapsulates the local flavors and the rich history and culture of the Edo period, offering a bite-sized happy memory in every piece.
Note: "Hako-zushi" is another type of pressed sushi, similar to kaku-zushi, but the key difference lies in the shape and size of the wooden molds used.
