Fujieda Morning Ramen introduction
“Morning Ramen” is a unique food culture born in Fujieda, Shizuoka. Known as one of the leading tea-producing regions in Japan, Fujieda has a long history of people starting their workday early due to tea trading and related activities. After work, they would often line up in front of ramen shops early in the morning to grab a quick meal. Seeing this, ramen shop owners started offering ramen during early morning hours, which is said to be the origin of this tradition. The original “Shida-style” Morning Ramen (or also known as “Marunaka-style” after the name of its originating shop) is crafted to be light and easy on the stomach, even first thing in the morning. It features smooth noodles with a refreshing soy sauce-based seafood broth low in oil. This unique offering has become a defining feature of Fujieda’s Morning Ramen culture. In true Fujieda-style, it is common to enjoy two bowls of ramen—one served hot (“On”) and the other served cold (“Rei”). While the Shida-style remains the classic option, other flavors such as tonkotsu (pork bone broth) and soy sauce variations have also adopted the “On” and “Rei” duo serving trend, gaining popularity across the region.
