Mikuriya soba (Mikuriya soba) is a local dish from the Mikuriya region of Gotemba City. Since this area cultivated a lot of soba and wheat, farmers made their own soba using “yam” or “natural yam” without using water, and ate it with soba soup made from chicken bones. Soba has a simple flavor and is good for the throat because it contains yams. The characteristic is that chicken bones are used in the broth, and chicken, carrots, and shiitake mushrooms are added to the ingredients. Definition of “Gotemba Mikuriya Soba” Yams and natural yams are used for the noodles. (Percentage does not matter) The noodles are made using homemade noodles or noodles made in Gotemba city. Use water from Gotemba for noodles (when using water to make noodles) and soup.
