Oyster rice
The crisp texture and rich flavor of oysters from HiroshimaOyster rice introduction
This is cooked rice cooked with rice by combining oyster meat with soy sauce, sake, broth, etc. Oyster is a representative food of Hiroshima, and the production volume is number one in Japan. Hiroshima oysters are characterized by their large size and rich flavor because there are good conditions for oyster growth, such as nutrients flowing in from the Chugoku Mountains. Oyster farming began at the end of the Muromachi period, mainly on the tidal flats of Hiroshima Bay. Various menus have been created in the long history until now, and although there are various theories about its origin, it is said that “kakimeshi” was created as a dish served on a “oyster boat” connecting Osaka Prefecture and Hiroshima Bay.
