Ise Lobster
Tender, springy texture with a rich, sweet flavor that melts in your mouth
Ise Lobster introduction
The intricate currents of the rias coastline in the Kinan region foster a rich variety of seafood, and among the most prized delicacies is Ise lobster (伊勢エビ, Ise ebi). Wakayama Prefecture is one of Japan's leading producers of Ise lobster, with most of the catch coming from the Kinan area. Harvested with gill nets during the winter months, it is a representative seafood of Kinan's winter season. Raised in the clean, nutrient-rich waters influenced by the Kuroshio Current, these lobsters develop firm, flavorful meat. Enjoyed raw as sashimi, the lobster offers a delightfully springy texture and a delicate sweetness. Whether grilled, simmered in soups, or prepared in other dishes, Ise lobster is a luxurious treat no matter how it’s cooked.
