Tonkotsu introduction

It is a local dish made by grilling ribs with pork bones, roasting them in sweet potato shochu, and simmering them with miso and brown sugar along with vegetables such as konnyaku and daikon radish. It is said that the outdoor cuisine made by Satsuma samurai warriors on hunting grounds and battlefields began, and Saigo Takamori also liked it. Since it contains plenty of ingredients unique to Kagoshima prefecture, such as pork, barley miso, brown sugar, and sweet potato shochu, it is popular as a local dish representing Kagoshima prefecture until today.
