About Tonkotsu
Tonkotsu (とんこつ) is a traditional dish made by grilling pork ribs, then sautéing them with sweet potato shochu before simmering them with vegetables like konjac and daikon radish in a blend of miso and black sugar.
This dish originated as a campfire meal prepared by Satsuma samurai during hunts or on the battlefield. It is said to have been a favorite of the famous Saigo Takamori. Using quintessential ingredients from Kagoshima Prefecture, including pork, barley miso, black sugar, and sweet potato shochu, Tonkotsu remains a cherished regional specialty of Kagoshima to this day.
