Katsuo dishes (かつお料理, Katsuo ryouri) from Makurazaki carry over 350 years of fishing tradition and pride. Makurazaki has been Japan’s top producer of katsuobushi, or dried bonito flakes, consistently holding this title since 1994. The town is dotted with katsuobushi factories, filling the air with the smoky aroma of freshly-made bonito flakes. One of the highlights of visiting Makurazaki is enjoying freshly caught katsuo (bonito) from local waters, offering flavors you won’t find anywhere else. Another unique delicacy from this area is "Buen Katsuo" (ぶえん鰹), a premium bonito that is single-line caught on offshore waters, expertly bled on the boat to ensure freshness, and rapidly frozen at sea.
