Rock Oysters
Known as the "milk of the sea," the ultimate summer delicacy
Rock Oysters introduction
Rock oysters (岩牡蠣, Iwagaki) from Tottori are known for their impressive size, with some reaching up to 20 cm in length and weighing as much as 1 kg. These natural treasures are harvested through methods like free diving. Often referred to as the "milk of the sea," Iwagaki are best enjoyed raw with a squeeze of fresh lemon for a bold and refreshing experience. Unlike winter oysters, these delicious shellfish are in season from early summer to mid-August, making them the ultimate taste of Tottori's summer.
