Shiokatsuo Udon (しおかつおうどん, Shiokatsuo udon) is a flavorful dish topped with "shiokatsuo," a traditional preserved food from the Nishi-Izu region. Perfect for refreshing your appetite or as a comforting meal after drinking, this dish is widely enjoyed at over 30 local restaurants. Some spots even elevate the experience by adding a soft-boiled hot spring egg as a topping. The key ingredient, "shiokatsuo," is made from high-quality skipjack tuna caught at Tago Port in Nishi-Izu. The whole tuna is salted and dried, creating a preserved food that has been cherished for generations. Apart from its culinary use, shiokatsuo is also considered a lucky charm and traditionally offered at household altars. Nishi-Izu Shiokatsuo Udon was introduced in 2009 by the Nishi-Izu Shiokatsuo Research Association, and it has since become a beloved local specialty.
