Toyama's representative seafood, white shrimp, is designated as “Toyama Prefecture's fish” along with firefly squid and yellowtail. The meat is sweet and has a texture that melts on the tongue, but the shell is soft enough to be eaten even whole, and it is a nutritious food full of calcium, potassium, and magnesium. Small “white shrimps,” which are about 5 to 8 cm in physical condition, are shrimp that live only in the waters near Japan, and they live their whole lives swimming in deep waters 100 to 500 meters deep. The life span is about two to two and a half years. As a specialty of Toyama, it has been used in various dishes such as “kakiage,” “fried chicken,” “soup stock,” and “sashimi,” and has been loved by local people. The white shrimp bowl is a dish where about 90 pieces of carefully peeled white shrimp sashimi cover the bowl, and the elegant sweetness is exquisite.
