Shiroebi Don (白エビ丼, Shiroebi don) is a specialty dish from Toyama, showcasing shiroebi, one of the prized treasures of the sea alongside hotaruika (firefly squid) and buri (yellowtail), officially designated as one of the "Fish of Toyama." Shiroebi, known as the "white shrimp," is small, measuring around 5 to 8 cm in length, and can only be found in Japan’s coastal waters. These delicate shrimp live their entire lives swimming in the deep seas at depths of 100 to 500 meters, with a lifespan of about 2 to 2.5 years. These shrimp are cherished for their sweetness and tender, melt-in-your-mouth texture. Even the shells are soft enough to eat, making them not only delicious but also highly nutritious, packed with calcium, potassium, and magnesium. Beloved by locals, shiroebi is used in a variety of dishes including tempura, deep-fried snacks, dashi (soup stock), and sashimi. Shiroebi Don is a true treat, featuring roughly 90 pieces of hand-peeled shiroebi sashimi beautifully covering a bowl of rice. Its refined sweetness is simply extraordinary.
