In northern Kyushu, chicken is called “kashiwa” and has been popular as an ingredient since ancient times. It is said that the spread of kashiwameshi was triggered by the ekiben “Orio no kashiwa meshi”. A local dish in which cooked rice is mixed with boiled ingredients such as kashiwa, shiitake mushrooms, burdock, carrots, etc., is called “kashiwameshi.” It is a standard local home-cooked dish made at homes and cafeterias in various regions of Fukuoka prefecture, and is also eaten at festivals, athletic meets, and on special occasions such as Halle Day. Most of the chicken used in “kashiwameshi” is “hakata jidori,” which is a local chicken from Fukuoka prefecture, and is characterized by its muscular, crisp, and umami that increases the more you chew it.
