Gomadashi Udon (ごまだしうどん, Gomadashi udon) features a special seasoning called "Gomadashi," a local specialty from Saiki City, Oita Prefecture. Gomadashi is a flavorful paste made by mixing the flaked grilled meat of "Eso," a fish caught year-round in the area's coastal waters, with mirin, soy sauce, sugar, and a generous amount of sesame seeds.
