Daigo Shamogetan introduction

The new specialty dish “shamogetan” from Daigo in Ibaraki prefecture is a medicinal dish using Okukuji shamo, a local specialty. Okukuji shamo is a chicken raised in a mountainous area surrounded by nature spread out in the Okukuji region of northern Ibaraki prefecture. “Shamo” is written as “war chicken” in kanji, and since it is originally a breed for cockfighting, the meat is firm, low in fat, chewy, and is characterized by a rich flavor with deep richness. Shamogetang is a specialty newly created in Daigo by taking advantage of the rich flavor of Okukuji Shamo, inspired by the Korean dish samgye-tang (samgye-tang). In this dish, whole rice dumplings are simmered to create a dish with excellent nourishment and strength. In addition to Okukuji shamo, medicinal ingredients such as ginseng, jujube, and garlic are used as the main ingredients, which have high nutritional value and can be expected to be particularly effective in recovering from fatigue and improving immunity.
