Funazushi (鮒ずし) is a type of fermented sushi known as "narezushi," made by salting crucian carp and fermenting it with rice. The preferred ingredient is the roe-bearing nigorobuna, a unique species native to Lake Biwa. In the past, Funazushi was traditionally prepared in households as a preserved food, but due to the decline in the population of nigorobuna, fewer families make it today. Nevertheless, it remains a beloved specialty of Shiga Prefecture. Its flavor is distinct yet surprisingly exquisite, attracting many who come to enjoy this cultural delicacy.
