Funa zushi is a “narezushi” that has been salted and marinated in rice and fermented. For materials, the child of Nigorobuna, a native species of Lake Biwa, is best suited. Previously, it was made as a preservative food in each family, but in recent years, there has been a decrease in nigorobuna, and the number of families making hizushi has decreased. However, it is still very popular and has become a specialty product of Shiga Prefecture. Its taste is unique and exquisite, familiar to many.
