Echizen grated soba introduction

Echizen soba is a soba that is mainly eaten in the Reihoku region of Fukui prefecture. It features a unique soup with a lot of grated daikon in advance, and noodles that are black and firm. Every time you chew soba, the spiciness of radish, and the scent of shavings gradually become entwined in the soba, and the deliciousness that changes to a deep flavor is unavoidable. The name of “Echizen soba” seems to be derived from the fact that when the Showa Emperor was inspected Hokuriku in Showa 22, he ate grated soba in Takefu, and later it was called “that Echizen soba”.
