Toyama Dried Persimmons (富山干柿, Toyama Hoshigaki) are a traditional delicacy made from a unique variety of persimmons grown in the former Fukumi and Johana towns of Toyama Prefecture. These dried persimmons stand out with their amber-colored, torpedo-shaped appearance, substantial size, and notable sweetness combined with a chewy texture. They are crafted using the "Sansha" variety of persimmons, which, despite being vulnerable to disease, are indispensable for their exceptional flavor. A special processing method is used to shape the persimmons. During the drying process, a meticulous hand-kneading technique called "temomi" is performed. This ensures the even distribution of moisture and sugars throughout the fruit, enhancing its rich flavor and texture. Remarkably, this process is still done entirely by hand, preserving the traditional craftsmanship that’s been maintained for generations. To meet strict quality standards before shipment, the persimmons are checked for issues like foreign substances, odors, and variations in size, color, shape, and texture. With an annual production of approximately 300 to 400 tons, Toyama Dried Persimmons have become a beloved regional specialty and a popular choice for high-quality gifts.
