Taste the blessings of the lake with savory mackerel somen noodles
Grilled Mackerel Somen introduction
Grilled Mackerel Somen (焼鯖そうめん, Yaki Saba Soumen) is a traditional dish from the Kohoku region of Shiga Prefecture, enjoyed throughout the area. This unique dish features grilled mackerel simmered in a flavorful broth and served together with somen noodles. In the Kohoku region, there is an old springtime custom during the busy rice planting season called "Satsuki Mimai," where households send gifts, including grilled mackerel, to their married daughters' families. The mackerel might also be enjoyed by lightly grilling it and serving it with a tangy soy-vinegar sauce. In April each year, grilled mackerel somen is a special offering at the "Hikiyama Matsuri," a festival held at Nagahama Hachiman Shrine. It is closely associated with springtime traditions and the agricultural season. The preparation involves simmering grilled mackerel in a broth seasoned with dashi and other flavorings until it reduces. The mackerel is then plated, and the broth is strained to remove bones. Green onions are briefly heated in the broth and served alongside the fish. Somen noodles, cooked to a firm texture, are added to the broth to absorb the flavors. Finally, the seasoned somen is arranged around the mackerel on a plate, with a generous pour of broth for serving. Today, this dish continues to be enjoyed in homes, passed down through generations, and is also readily available in supermarkets, specialty stores, and local eateries. Its rich history and delightful flavors make it a favorite even among younger generations.
