Goshiki manju introduction

Kanazawa's specialty “Goshiki manju” is an assortment of 5 types of fresh confectionary. In Keicho 6, Tamahime, the daughter of Tokugawa's second shogun Hidetada, married Toshitsune, the third lord of the Maeda family. The five-color fresh confectionary was created by Kichizo Kashida, a confectioner who works as a celebration of that. The five colors represent the blessings of heaven and earth of “sun, moon, mountain, sea, village”, “sun” is a round mochi containing koshian with red rice flour applied to the top, “moon” is a white skinned manju, “village” is a steamed rice cake wrapped in mochi and sprinkled with yellow steamed mochi, and the “sea” is a diamond-shaped mochi with red bean paste, which is reminiscent of waves when arranged, “mountain” represents a circular mochi steamed in a circle, which represents a paddy field. Even now, in Kanazawa, it is widely used as one of the must-have celebratory confectionaries for weddings.
